Abstract:
Anhand politischer, kultureller und internationaler Veränderungen werden in dieser Arbeit die unterschiedlichen Phasen der färöischen Esskultur in historischer Perspektive dargelegt und gezeigt, welche Bedeutung diese für die Färinger der Gegenwart hat. Erkenntnisse der neuen Disziplin der Kulinaristik bilden hierfür den theoretischen Rahmen. Das internationale Bekanntwerden der färöischen Esskultur und Produkte war vor allem durch die Erfolge der New Nordic Cuisine (NNC) möglich, welche einen Statuswandel der skandinavischen Küchen auf der Ebene der Spitzenrestaurants bewirkte. Diese neue Esskultur wird jedoch auch von kritischen Stimmen begleitet, welche unter anderem den Fokus auf das ‚ursprünglich Nordische‘ als eine diskriminierende Praxis verstehen und unterstellen, dass die anfangs postulierte Zusammenarbeit aller nordischer Länder nicht realisiert wurde. Anhand einer sprachlichen Analyse des Buches ‚noma‘, des Vorzeigerestaurants der NNC, wird in dieser Arbeit der Status der Färöer-Inseln innerhalb dieser, von Dänemark ausgehenden Esskultur eruiert. Dabei wird behauptet, dass postkoloniale Sprachmuster, zusammen mit der allgemeinen Vorstellung von Inseln als isolierte und von äußeren Veränderungen unbeeinflusste Gebiete, ein Bild hervorrufen, das die Färinger als primitiv und naturgebunden darstellt. Dies wird verstärkt durch die Präsentation der dänischen Köche als Repräsentanten einer überlegenen Kultur. Nichtsdestotrotz beförderten die Initiativen und Mitglieder der NNC ein Aufleben der färöischen Restaurantszene, welche in weiterer Folge von einem gestärkten Selbstbewusstsein der Färinger für die eigene (Ess-)Kultur begleitet wurde. ; This thesis takes into focus the Faroese food traditions by presenting the several stages of food culture that led to today’s variation of globalized and traditional eating habits. As changes in food culture are strongly intertwined with social and political changes, the history of the Faroe Islands, national politics, international cooperation, as well as geographical and climatic preconditions are discussed. One reason for the growing popularity of the Faroe Islands is the international reputation of the New Nordic Cuisine (NNC). This new food culture put the Nordic region on the forefront of culinary innovation which nowadays stands for the return to local and regional eating traditions. The NNC nonetheless also brought about critical voices which, amongst other things, pointed out the discriminatory practices that constituted this new cuisine and the failure in successfully including other Nordic regions. This thesis analyses linguistic features used in relation to the Faroe Islands to determine their status within the NNC and discusses potential postcolonial aspects in one of the NNC’s most popular books ‘noma’. It is argued that a postcolonial mindset, combined with the general conception of islands as isolated and primal spaces, generates a picture of the Faroe Islands as a backward and nature-bound society and that such a mindset, too, portrays the chefs of the NNC as representatives of a superior culture. Nevertheless, the Faroe Islands underwent a revolution in the gastronomic scene and also gained strong self-confidence concerning their culture through the changes that the NNC and their members brought about.
