Abstract:
International audience ; This article examines French cooking recipes published between the middle of the 17th and the end of the 20th century. Whereas, in particular, the presence or the absence of participial constructions in a connecting and framing role opposes classical (17th and 18th centuries) to modern recipes (19th and 20th centuries), this diachronic comparison, as far as what has been called ‹action-inducing genres› is concerned, leads to a distinction between written recipes before and after 1900. It is argued that only the latter ones really constitute an ‹action-inducing genre› (and the former ones, an ‹action-inducing genre› in the making), namely due to the systematic masking of the subject of enunciation, and typesetting features such as numerous paragraphs. ; Il est observé dans cet article comment la fabrique des recettes écrites de cuisine a évolué du français classique au français moderne. Si, notamment, la présence ou l’absence de constructions détachées participiales à rôle d’organisateur temporel permet d’opposer respectivement recettes classiques et recettes modernes, il est montré que c’est avant tout pour le xxe siècle, et donc pour une partie seulement des recettes de l’époque moderne, que l’on peut proprement parler de ‹discours programmateurs›. En effet, les recettes d’avant 1900 ne relèvent encore que d’un genre en constitution dans la mesure où, en particulier, leur font défaut l’effacement systématique de la source énonciative et, en lien avec une construction à longue portée des chaînes de référence et une structuration périodique, une forte segmentation typographique.
